Most recipes, that I've seen, use nutritional yeast for the cheesy flavor so, if you are vegetarian, you might try substituting real cheese (Parmesan) for the nutritional yeast. I don't think that cheese is made with yeast. If you're vegan, I think there is a vegan Parmesan. I had heard that it has a ntty flavor of sorts so I had thought about using almond meal or something similar in the gravy and sauce recipes.
